店名、そして入り口右手の壁に並ぶチャコール＝墨のオブジェが示す通り、レストランのテーマは炭火。カリフォルニア・キュイジーヌをベースにした、ボリュームたっぷりの本格グリル料理を楽しむことが出来る。ワインは、カリフォルニア中心。価格設定はリーズナブルである。

ガラス板上のアプローチを抜けると、ニューヨーク・トライベッカをコンセプトにデザインされた、地下とは思えない8mを超える吹き抜けのメインダイニングが目の前に広がる。他に個室、店内階段を上ったロフト、バーが準備されている。シャンデリアや大きなミラーが醸し出すラグジュアリーな空気に、茶色ベースの色彩とおうとつのあるレンガの壁が暖かみを加え、カジュアルでもフォーマルでも楽しむことが出来る。ロフトスペースにはソファが設置され、ラウンジとしての利用も可能。

恵比寿西一丁目の五差路近く、駅周辺の喧騒が一段落する通りの地下1Ｆ。どんなシチュエーションで訪れても、店内の程良い温度が食することの楽しさを必ず高めてくれるレストランである。

The name says it all. This Cardenas restaurant has one specialty and they do it very well. All items including fish, seafood, vegetables, chicken and steaks are, of course, charcoal grilled. However, what makes them very unique is the fact that the restaurant insists on using bincho charcoal to give all the grills subtle but unique Japanese flavors, thereby offering diners a pleasant alternative to the more commonly found hickory flavored barbecue.

A highly acclaimed wine list consists mainly of Californian wines, with a wide variety of reasonably priced choices.

From the entrance, you walk on the glass floor through to the main dining space. The space was designed to recreate the atmosphere of Tribeca in New York. Located in the basement of a building, it is surprisingly spacious with its high walls and soaring ceilings of more than 8 meters. Above the main dining space, there is an upstairs loft space, private dining room, and bar space. The atmosphere is elegantly enhanced by a chandelier and large mirrors. Brown colored brick walls create a very comfortable for patrons whether they are having a formal or casual dinner. Finally guests are welcome to use the loft space as a lounge as well as it is equipped with couches.

Completing the picture is a capable team of wait staff working to ensure that you have a memorable and pleasant dining experience in this, the Cardenas Group' s flagship restaurant.
