このレストランには、ワインリストが無い。

もちろん、ワインが無いわけではない。
ワインを頼みたい際には、「どんなワインが飲みたいか」をスタッフに伝える。すると、それに応じた本日のお薦めワイン数本がテーブルまで運ばれ、その中から、ゲストがテイスティングをして選ぶというシステムである。

グラスワインであれば、テイスティングをした中から好きなものを選ぶ。ボトルでオーダーの場合は、テイスティングをした中から選んでもよし、テイスティングを基準にプラスαの好みを伝えれば、それに相応しいボトルがオーダー可能。
テイスティングをしたボトルの価格を聞いて、「もう少し、リーズナブルなものを・・・・」というちょっと言いにくいオーダーも、遠慮なく言って欲しいとのこと。ちなみに、グラスワインは一杯￥600〜。

「同じものをもう一杯いくか、次はさっきテイスティングをしたちょっとしっかりしたものにするか・・・・」などと迷うことで、結局一杯余計に楽しんでしまうゲストが増えるかも？
というレストラン側の「作戦」かもしれないが、ワイン好きにとっては、喜んではまってしまいたくなる「もてなし」である。

「作戦」と書いたが、お店の本意はテーブルでのゲストとの対話。たとえグラスワイン一杯であっても、オーダーすること自体がもっと楽しくなりそうだ。

There is no wine list in this restaurant. Of course, this does not mean they do not stock wines. If you wish to drink wine, you simply let them know what kind of wine you would like to drink. Depending on your preference, they will bring you a couple of matching bottles to your table. Then, you will taste them and select.

If you would like to order by the glass, you simply pick what you preferred the best. If you would like to order by the bottle, you either pick the one you like or ask them for additional choices. Of course, they will happily accommodate your price requirement. So, if you think the one you like is too expensive, you are encouraged to ask for one with similar character but more reasonably priced. (Glass wine is priced from 600 yen)

This is a good way for the restaurant to sell more wine and for the wine lovers to taste and order many different wines.
