ビストロ・コティディアンは2021年2月28日に麻布十番での営業を無事に終えました。以下は須藤シェフからのメッセージです。

 

After celebrating its 10th anniversary on February 22nd, Bistrot Quotidien closed its doors for the last time at the end of the month. The following is a message from Chef Ryosuke Sudo:

 

 

いくつもの失敗をし、たくさん悩んで、すこし学んで、多くの人に助けられ、なんとか2月22日にビストロ・コティディアンの10周年を祝うことができました。

 

Last month, I was able to celebrate the 10th anniversary of my restaurant. Since opening my own place ten years ago, I have made many mistakes, learned a lot from each them, and received the support of many people.

 

オープンしてから、予約が少ない日が続くと胃がキリキリと痛み、満席状態が続けば深夜まで後片付け、翌日は早朝から築地に行ったり、仕込みをしたり。気持ちに余裕を持てず、スタッフに当たってしまうこともありました。


それでも助けてくれたスタッフには感謝の言葉しかありません。

 

In the beginning I remember the sharp pain in my stomach when we only had a few diners. But when the place was busy, we worked from early in the morning until late into the night. I regret putting my staff through those extremely long days, and realize now that I was not prepared for success.

 

多くの人が楽しそうに食事をしてくれても、少しでもネガティブなことをネットに書き込まれると、疑心暗鬼になって、食べに来てくれている人が敵に見えたこともありました。

 

I remember that even when the diners were seemingly enjoying their dishes, I was still paranoid. I wanted to know if they were really enjoying their meals, especially after seeing not-so-positive reviews online.

 

しかしながら嬉しいことにビストロの楽しみ方を良く知っている人が集まってくれるようになり、コロナ禍にありながらも最終日まで多くの人に来ていただきました。

 

But fortunately, I overcame the tough times. This was thanks in large part to our regular diners, which included some hardcore bistro-loving Francophiles. In spite of the State of Emergency, our regulars continued to visit until our last day.

 

 

麻布十番での最後のディナーを終えて、まだ達成感も解放感も湧いてこない、というのが正直なところです。

 

その一方で、妻と二人三脚で始めたビストロ・コティディアンは、自分たちが思っていたよりも多くの人に愛されていたということを実感し、感謝の気持ちで一杯です!

 

I thought I would feel a sense of accomplishment or liberation once we were finally closed. However, it seems it might still be too early to feel anything. Still, I realized that the Bistrot Quotidien I started together with my wife became a more beloved restaurant than either of us could have imagined. For this we are extremely grateful!

 

10年間ありがとうございました。

麻布十番のビストロ・コティディアンがあるのはフランス人が経営する外装がオレンジ色のパティサリーの入っているビルの2階。ドアの外は1階の華やかさと比べると若干控えめな印象。

 

しかしながらドアを開けて店内に足を踏み入れれば、そこには観光客で賑わうパリの目抜通りではなく、ひっそりと裏道に佇む流行り廃りを超えた本物のビストロを彷彿させる雰囲気がある事に気づくはず。そしてビストロ・コティディアンの魅力は単に気軽に食事を済ませる為の場所ではなく、それ以上の何かを期待できるという事。

 

手作り感ある内装は明らかに古き良きビストロを思わせながらも何故か洗練され、心地良い緊張感を醸し出し、まさしく手間暇かけてつくられる料理を時間かけて味わうに相応しい空間を演出。それを象徴するのがビストロには珍しく純白のクロスがテーブルにかかっているという事。

 

そして子供の頃から職人的に拘りをもって仕事する人に憧れていたオーナー・シェフ、須藤亮祐の経歴もビストロ的ではない。調理師学校を卒業後、地元の横浜にあるフレンチ・レストランに3年間勤めた後の5年間をフランスで過ごす。

 

その間に働いたのはパリや南仏サントロペにある2星や3星のレストラン5店舗で、特に影響を受けたのがミッシェル・ロスタンとルカ・キャルトン。高い緊張感の中、日々ガストロノミーの最先端を行くチームの一員として常にベスト以上の仕事を求められる経験をする。(因みに、控えめながらも店内に飾れているのは、当時の仲間と一緒に写された若き須藤の写真)。

 

 

しかしながら、日々ガストロノミーに携わりながらも、緊張感から解放される休日にはビストロやブラッセリーで飲んで食べたり、フランス人の仲間の家に招かれ家庭料理を振る舞ってもらったりしながら日常のフランス料理の味わい深さに須藤は魅了されていく。

 

因みに、ミシュランの星付きのレストランで働きながら、余暇には街角のビストロでフランスの食生活を満喫するという二重生活をしてきた須藤にとっては、星付きのレストランの料理も、ビストロの料理も金銭的な意味合いは大きく違えど、両方ともフランスの食文化を成す重要なもの。それらを比べて序列づけるのはナンセンス。

 

しかしながら食べる側にとって、ここビストロ・コティディアンで味わう『フロマージュ・ド・テット』や『シュークルート』などのビストロ料理には、典型的なものにはない洗練された何かがあるのは一目瞭然。実際に味わってみれば、質実剛健なビストロ料理のパンチを感じながらも非ビストロ的な何かを兼ね備えていることにも気付くはず。

 

そんな料理を味わえるビストロ・コティディアンのコティディアンとは『日常』という意味のフランス語。まさしくビストロ・コティディアンは須藤亮祐の少し非日常的なビストロ料理というユニークな贅沢を日常的に味わえる空間なり。

 

 

 

Bistro Quotidien is located above a French patisserie with flashy orange colored façade. Outside the door on the 2nd floor, you might think this bistro is rather simple and discreet.

 

Once you step inside, however, you will notice an atmosphere of quintessential bistros tucked away on backstreets, frequented by locals in Paris, rather than a bistro which is more like a tourist destination, located on major avenues of Paris. The atmosphere has you feeling that you can expect something more than a casual bistro dining experience.

 

Even though everything placed inside is suggestive of bistro, you will somehow sense that this place is something more than a place for casual dining. It is probably because, unlike in other bistros, all tables in Bistro Quotidien are covered by a crisp white cloth. This is definitely a place to savor bistro fare prepared with time and care by a highly qualified chef.   

 

Chef Ryosuke Sudo has been admiring people with craftsmanship ever since his childhood. Interestingly, his culinary resume is not exactly tied to bistros. Having graduated from a well known culinary school, he started his career as a cuisinier at a French restaurant in Yokohama where he spent his first three years. Then he went to France. 

 

For five years, he worked for five restaurants which were all Michelin starred in Paris and Saint-Tropez. At those restaurants, he worked as a part of teams always expected to perform better than the best on the keen edge of gastronomic culture. He recalls his experiences at Michel Rostang and Lucas Carton in Paris were especially precious. On the wall inside his own bistro in Azabu Juban are framed photographs of young Ryosuke Sudo and his fellow aspiring cuisiniers.

 

While he was pushing the envelope of gastronomy inside the kitchens of the most prestigious French restaurants, he also started to discover the pleasure of dining out at local bistros and brasseries when he was free from the intensity. He was often invited to his colleagues’ houses and treated to French family cooking.

 

Having led a double life of working inside the kitchens of Michelin multi-starred restaurants and enjoying bistros and brasseries when he was not working, Chef Sudo believes it does not make sense to compare starred restaurants to bistro and brasseries. Even though their monetary values are vastly unequal, to him, they are both equally important segments of French culinary culture.

 

From the point of view of diners, bistro standards such as “Fromage de Tête” and “Choucrote” are presented with a slight sense of sophistication. They are no doubt quintessential bistro fare. However, they are slightly different from that found at ordinary bistros.

 

Bistro Quotidien means bistro daily in English. This is a bistro at which you can daily savor Chef Sudo’s take on bistro fare which is not necessarily ordinary.

前菜・メイン・デザートは、それぞれ日々4種類前後の選択肢があり。

For appetizer, main, and dessert, the menu features four choices for each. 

 

プラス1,500円でメインの一皿を須藤シェフのスペシャリテ「カスレ」に代えられる。

For an additional 1,500 yen, you can have Chef Sudo’s speciality cassoulet as main dish.

アラカルト

 

前菜は10種類程度で1,000円前後から2,000円前後まで。人気の田舎風のパテは1,300円、フロマージュ・ド・テッドは1,600円、山羊のチーズとサラダは2,400円。

 

The a la carte menu features approximately ten appetizers priced from around 1,000 to 2,000 yen. Examples of these appetizers include the popular country style pate, fromage de tête (Crisply grilled pork head meat), and goat cheese salad, which are 1,300, 1,600 and 2,400 yen respectively. 

 

メインは8種類前後が2,000円代から。人気のシュークルートは2,600円とカスレは3,200円。フランス産の仔羊のロティは3,600円。

 

The eight main dishes are usually priced at around 2,000 yen. For examples of pricing, the popular selections of sauerkraut with homemade Iwachu pork sausage & bacon, cassoulet, and roast French lamb are 2,600, 3,200 and 3,600 yen respectively. 

 

一番人気の800円のラム酒風味のクレーム・キャラメルなど5種類前後のデザートと、チーズの取り揃えは黒板のメニューに書かれている。

For dessert and cheese selections, be sure to check the hand-written blackboard menu. We recommend the rum flavored cream caramel at 800 yen!

DRINKS

シェリー以外のワインは全てフランス産。リストにはシャンパンや食前酒などを入れて約50種類が網羅され、赤白のワインは約20種類ずつ、質実剛健なビストロ料理に合わせて楽しむのに相応しいワインが3,800円から取り揃えあり。もっとも充実している価格帯は6,000円台。ブルゴーニュやボルドーだけでなく、ローヌやラングドック・ルーションなど南仏のワインの割合が比較的高いのが特徴。

All wines at Bistro Quotidien (except Cherry) are from France. The wine list features approximately 50 wines, including Champagnes and aperitifs. The selection of 20 wines (both red and white) have been specially selected to match with bistro fare, and include wines not only from the major regions of Burgundy and Bordeaux, but also from Southern France, including Rhone and Languedoc-Roussillon. Wines start at around 4,000 yen, with the most popular selections in the range of 6,000 to 7,000 yen.

常時グラスでは赤白3種類ずつ800円から提供されているのが良心的。グラスのシャンパンは1種類1,300円から。

Wines available by the glass are priced from 800 yen, and three selections of both red and white are offered. Champagne by the glass is available from 1,300 yen.
