通りより､シンプルな階段を降りガラスの扉を開けると､すぐの右手にオープンキッチン､そして左手にアイボリー､ブラウンを中心にシンプルにまとめられたダイニングが広がっている｡

日本とイタリアの数々の名店を経たシェフ江部が供するのは、プーリア地方の料理を幹にしたシンプルかつオーセンティックな品々。食材はもとより、塩、オリーブオイル、トマトといったイタリア料理の基本素材へのこだわりに象徴されるように、経験に裏打ちされたディテールへの目配りが、素材の良さを活かした繊細な味わいに深みを加えている。
ワインのセレクトは、料理とのマッチングを重視したバランスの良い構成。

「コルテージア」とは､イタリア語で「心尽くし」の意｡「近すぎず､離れすぎず」のサービス､ディナーで前菜･サラダにパスタ2皿といったゲストの好みを優先したオーダーも快く受け入れてくれる柔軟さ､壁面にアクセントを添える季節の植物､革製のナプキンクリップ･･･と有形･無形の細やかな心尽くしが随所に見られるが､全てがあくまでさりげない｡
大仰なインテリアや過剰なサービスを売りとするレストランが少なくない中､このさりげなさが､自分なりのレストランの楽しみ方を知ったゲストにとっては､最高の心尽くしである｡

Cortesia is tucked away in the basement of a building located on an unnamed street off Koto Dori, known to many as Antique Avenue in Minami Aoyama. There is a light box sign outside, instead of the tri-color flag that seems almost mandatory for Italian restaurants in Tokyo. After descending the stairs you emerge into the reception area adjacent to which is an aromatic open kitchen. Guests proceed from there into a muted ivory and brown colored dining area that has been kept extremely simply in decoration. Noise from nearby diners is not an issue here with the spacious layout and ample room between tables.

Chef Ebe has worked in many renowned restaurants both in Japan and Italy. What he dishes up is all simple yet authentic, inspired by the dishes being enjoyed in Puglia. He is very experienced and extremely selective in all basic Italian food ingredients such as salt, olive oil, and tomatoes. He pays meticulous attention to all details and makes sure to extract the very best from the ingredients. And as with all better restaurants, the wines offered are very carefully selected to match the nuances of his dishes.

CORTESIA is the Italian word for Courtesy. The staff can best be described as efficient, warm and attentive.
They are more than willing to accommodate any special requests you may have and appear to truly want you to enjoy your dinner. Their sense of cortesia is also expressed on all decoration items; plants, leather napkin holder, etc. While there are recently many restaurants overly decorated and providing service that is almost annoyingly friendly, Cortesia will allow you to feel relaxed and comfortable.

This is a relatively new Italian restaurant, which is already providing quality food and service to its guests. In the very near future, it will be serving food to more guests and providing better service than is currently available.
